Cinnamon-Almond Balls

Who already started to bake Christmas cookies? The first cookie jars at home are filled with chocolate-walnut brownies, nougat croissants and Christmas Stollen. These are the classics alongside shortbread, gingerbread and Spekulatius. But why not try some lesser known alternatives? On Pinterest, I discovered a recipe for cinnamon balls and was so enthusiastic about the simple preparation and few ingredients that I directly baked my own cinnamon-almond balls. Those of you who like energy balls and cinnamon will love these delicious and healthy cinnamon-almond balls! The preparation takes max. 10 minutes plus 10 minutes baking time in the oven. It is especially nice to sprinkle the baked cinnamon-almond balls with icing sugar. If you don’t like icing sugar, you can also roll the balls in grated coconut.

VANILLA CACAO BLISS BALLS

While traveling through Australia, I discovered my love for bliss balls again. These balls are so energy-rich¬†and the perfect grab-and-go snack all day long. Several Australian supermarkets have bliss balls on their stocklist with different flavors. My absolute favorite ones were Carman’s Almond, Super Seed & Vanilla Bliss Balls. I really loved the combination of vanilla and the slightly sweet taste of the dates mixture. Back home I tried my own version of bliss balls and I am super happy with the result: Vanilla Cacao Bliss Balls with crunchy almond chunks and nuts. Preparation takes literally just 10 minutes. You only need a good food processor to crush the almonds, dates and nuts!

FENNEL-CARROT SALAD WITH COUSCOUS

The year 2017 is just coming to an end. Like every year, I kind of feel astonished how fast the year has just passed by. Time flies¬†– that’s so true. Looking back on 2017, I am more than grateful for all the exciting moments I experienced and the people I met. I am so grateful to have the chance to live my life to the fullest. 2017 was packed with lots of joyful moments, some challenges and great opportunities. Especially, I will remember the awesome time I had during my semester abroad in beautiful Norway. Food, of course, played a huge role in 2017. Even though I only rarely published new recipes on the blog this year, I prepared hundreds of delicious meals and tested some new ingredients and combinations. Thus, I want to share one more amazing recipe from 2017 with you: A fennel-carrot salad with couscous.
