Breakfast/ Low Budget/ Snacks

Today I really felt in the mood to eat something bright and colorful, but not the usual combination of green, red or orange veggies. Instead, it had to be something that really sticks into your eye! Since ages, I wanted to bake something like porridge muffins. Spontaneously, I had the idea to add lots of mixed berries to the porridge. The outcome was a marvelous purple mixture, maybe it can even keep up with the famous Milka purple color. And because I love bananas, I did not want to miss them. So here we have banana porridge muffins!

Besides they are so simple to prepare and ready within a few minutes. Further I promise you, everyone can do this and there are no fancy ingredients required. Serves: 3 Cooking Time: 40 minutes

  • 1/2 cup (frozen) berries
  • 1 banana
  • 400g oats
  • 250ml milk (plantbased)
  • 100ml agave syrup
  • 2 tablespoons raisins
  • 1/4 cup of almonds
  • Pinch of cinnamon, vanilla and salt

Depending on whether you use frozen berries, you should first defrost them.

Slice up 3/4 of the banana and keep the rest for later to top the porridge muffins.

Next, add all ingredients to a big bowl and mix well.

After that, you just fill the mixture into the muffin baking tray and let everything bake at 200°C for about 15-20 minutes. If you like you can top the porridge muffins with some banana slices 5 minutes before you remove the baking tray from the oven.
