Desserts & Sweet Treats

Last year was truly an apple year for us! We still have so many apples stored in the house and I wonder if we will ever get rid of them. A cinnamon-date applesauce is always a good choice but my family asked me to prepare an apple cake. Of course, I am very happy to fulfil this desire. Since I did not want to bake the classic apple crumble, I thought of a new recipe. Especially, in the cold season, I love to drink a hot chocolate or a cup of tea together with some delicious piece of cake. Because the apple cake has a light cinnamon note, the taste reminds me of our delicious Christmas cookies.

As you might have noticed already, I absolutely love oats! Every time I eat yoghurt, I add a decent portion of oats to it. The same goes for the apple cake. Further, you might recognize that the previously mentioned cinnamon-date applesauce is also part of this recipe. Last but not least, you can halve the recipe and use a smaller cake tin if you wish. However, the cake is very popular in my family so it just lasts a few days. I hope you enjoy this recipe!

Serves: 6-8 portions Cooking Time: 1 hour

  • Dough:
  • 100g spelt flour
  • 100g oats
  • 100g grated almonds
  • 70g of native coconut oil
  • 2 tbsp agave syrup or maple syrup
  • 3 tbsp (plant) milk

  • For the filling:
  • 8-10 apples
  • 2 tsp cinnamon
  • 8 dates
  • 2 tablespoons agave syrup
  • 50g oats for the topping

Preheat the oven to 180 ° C.

For the dough, melt the coconut oil and mix it together with the other ingredients and knead it. The dough lump must then be cooled in the refrigerator for about 20-30 min.

In the meantime, the filling is prepared for the cake. The apples are peeled. Approx. 3 of the apples are then cooked together with the dates and a little bit of water in a saucepan so that a delicious date-cinnamon-applesauce is produced. Finally, the cinnamon is added and the mixture is sweetened with 1-2 tbsp of agave syrup. The remaining apples are cut into thin slices.

The dough is pressed into a baking tin which has a diameter of 24cm. Possibly, the tin should be first greased with a little bit of coconut oil. The cake dough is then covered with a layer of applesauce followed by the apple slices. Again, the apple slices are covered with the apple sauce and so on until all ingredients are used up. However, the top layer should be applesauce if possible. Finally, the cake is topped with oats and some splashes of agave syrup.

Now the cake has only to be baked for about 35-40 minutes. 🙂
