Breakfast/ Desserts & Sweet Treats/ Low Budget


Tonight I want to share with you one of my absolute favorite recipes: Almond pancakes. I swear it’s the most delicious pancakes recipe that I ever tried. Every time friends or family are coming to visit me in Berlin, I am preparing these pancakes for breakfast and everyone loves them. The secret ingredient is creamy almond butter (but don’t tell anyone ;-)).

One of the reasons why pancakes are perfect for breakfast or brunch is the fact that you can top them with whatever you like: while some people rather prefer to top them with chocolate, others go for the healthy version with fruits. One of my favorite combinations are the pancakes with banana slices and maple syrup. Sometimes I also add some crunchy granola. Maybe my friend Miriam would say that I add granola to everything I eat … hihi well that’s just 80% true ;).

Especially for Sundays, I love to prepare a big stack of pancakes because it looks so awesome!

Sundays call for almond pancakes

Serves: 2 Cooking Time: 15 minutes


  • 1 cups flour (I used wholewheat flour)
  • 1 tablespoon baking soda
  • 3/4 cup milk
  • 3 tablespoons almond butter
  • 2 tablespoons agave syrup
  • Pinch of salt
  • 4 tablespoons coconut oil

  • Toppings:
  • Banana slices
  • Fruits (jam, defrosted mixed fruits)
  • Almond butter
  • Almond flakes, walnuts
  • Agave syrup
  • Granola



Depending on which toppings you plan to serve, you should start with defrosting your fruits. You can simply heat them up in a small pan and add some agave syrup to sweeten them.


For the pancakes, you simply add the flour, baking soda and salt in a bowl. Next you add the milk, almond butter and agave syrup. Stir everything until it’s a smooth dough. Let it rest for about 10 minutes before you start baking the pancakes with some coconut oil in a pan.


Finally, you can build a pancake tower and top it e.g. with fruits, chocolate sauce and almond flakes.
